Hi, I’m Kate.
I recently moved from Seattle to Dallas, TX – hence the packing boxes.
I am a patient-researcher, that is, I have been in the health care system as a patient and also study science and medicine. I am not content to relinquish the decisions about my health to the professionals. Too many of them, in my experience, are not keeping up with advances in medicine — especially the nutrition and metabolic health link. When I have a health challenge, I study it and search for the latest clinical trials and findings. So, “patient-researcher.”
I have both bipolar II brain disorder and Asperger’s type autism. I experienced more than four years of sleep deprivation — possibly caused by psychiatric medications that are known to change sleep architecture. That problem launched me into a deep dive into sleep science. In 2026, I have succeeded in increasing my sleep duration from four or five hours each night, up to 6.5 to 7.25 each night — progress! I also published a combined journal/coloring/sleep science book that is available on Amazon, Before I Lay Me Down too Sleep: A Sleep Journal with Guided Prompts, Calming Visuals, and Science-Backed Insights.
Presently, I take courses through the Peterson Academy. It was recently founded by Dr Jordan Peterson and his family. Instructors are world class professors in psychology, philosophy, science, history, social sciences, humanities, and mathematics. My primary focus is neuroscience, metabolism, and nutrition.
I also experiment and track results. For example, After watching “Gamechangers,” I experimented with a whole food plant-based diet for 10 months. I was so depressed that my psychiatrist urged me to consider hospitalization. That wasn’t happening. I came across Dr Chris Palmer on YouTube. I’ll write more about this in a Field Notes post. Because of the stories of the successes of his bipolar and schizophrenic patients who followed a low carbohydrate ketogenic diet, I tried it myself. It works! (For me, anyway.)
I am now 18 months (in July 2026) free of any medication, my moods are stable, and brain fog is 90% gone. More recently, after watching many videos on the Carnivore diet and benefits people have experienced, I am experimenting with eating primarily beef, some chicken and wild-caught Pacific ocean fish, eggs, and low-glycemic organic berries.
Before launching Odyssey80, I worked as a flight attendant, patient care coordinator, real estate broker, in retail at an organic cooperative, and customer service. Those years taught me something about humans: many of us are carrying invisible metabolic and emotional burdens.
With Odyssey80 website and YouTube channel, I am hoping to create tools and present resources that help people understand what they are carrying — and learn how to remedy it.
Also, I am well into my seventh decade. I am not retiring. I am fired up and want to help others of my generation discover their “second wind,” and launch into a new adventure, an Odyssey.
I don’t know whether I can make this happen or not — it will take a lot of help from the Almighty. I dream of a homestead with enough acreage for chickens, ducks, Kiko goats and/or Katahdin sheep, and perhaps a few Dexter cows And dogs, as many rescue dogs as I can. And cats for the barn and for snuggling.
I’d like to create a reuge, a place where therapy groups and nursinng homes can bring their patients for some R&R in nature. Perhaps hire a few of our beloved military vetarans to mend fences and help with regenerating the soil through responsible animal husbandry.
We’ll see. Every odyssey has unexpected twists and turns, daunting obstacles and setbacks. Here’s hoping that one day I will be writing and posting YouTube videos from the Odyssey80 Ranch.
